Gluten Free Rolled Oats Banana Muffins

Gluten Free Rolled Oat Banana Muffins. I'm finding my love of cooking again. It's a great way to decompress between difficult pieces. And, since we have celiacs in the family, it's a nice challenge to make foods that are yummy, but gluten free. The recipe makes 14 muffins, or 12 muffins and some pancakes. 1.5 cups gluten free rolled oats

1 cup great value gluten free Flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

4 medium ripe bananas

1 cup honey

2 tablespoons olive oil

1/4 cup milk

4 tablespoons vanilla greek yogurt

1 large egg

1 teaspoon vanilla extract

Preheat oven to 350

Lightly toast rolled oats in air fryer for 3 minutes

Coat muffin tin with olive oil, then cover the bottom with a pinch of rolled oats

In large mixing bowl, mix gluten free flour, baking soda, baking powder, cinnamon and salt

Cut ripened bananas into mixture

Mix in other ingredients until well blended

Fill muffin cups to top and bake until toothpick comes out clean, roughly 25 minutes,

depending on your oven
